Adventures in Meal Planning

Meal planning and I have a complicated relationship. It goes well for a week or two, then laziness sets in. Or maybe the idea of meal planning loses its appeal. Or maybe I get too preoccupied with other things. No. It’s laziness. Pure and simple.

New year, new me?

What better time to get serious than the start of the new year. Not only that, but it’s also Veganuary – the pledge to go vegan for the entire month of January. Since I’m already vegan, committing to a month of meal planning seems a worthy enough alternative (for me at least). Who knows? Maybe it will turn into a habit that lasts! Fingers crossed, anyway.

 

Now what?

That just leaves the hard part. Figuring out what to make without relying on a small handful of the same recipes. Let’s face it – that would be beyond boring and I’d probably give up in no time yet again. This time, I’m going to get a little help from one of those meal box plans – Hungryroot – to jump start me in a healthier direction and a bit away from all of the unhealthy vegan foods I’ve been eating lately (especially over the holiday season). Mind you, I won’t be giving up those foods entirely. After all, I’d like to post some product reviews throughout the year. Speaking of which, I’ll be sure to post about my experience with Hungryroot and their vegan options in a few weeks!

Cookbooks, cookbooks, and more cookbooks.


I will also rely on my collection of vegan cookbooks. I have 130 of them. You read that right. 130 vegan cookbooks. I counted. And I’ll probably keep buying more (I *might* have a cookbook problem). Each week, I will pick 2 or 3 recipes from a cookbook to supplement what I get as part of the meal box to keep things interesting. I’ll be sure to share those adventures with you too!
